I grew up on a farm surrounded by fruit-bearing trees and different types of vegetables. As a little girl, I have gotten used to the sight of mounds and mounds of fresh produce being packed and sold in the markets near our community. You might have thought that I grew up to be really healthy, fit and a true blue veggie lover. Well, unfortunately, you thought wrong.
My father is the real farmer and healthy eater in the family, but sadly I didn’t inherit neither traits! I felt that I have seen so much fruits and vegetables in my lifetime that I have gotten so tired of it. I refused to eat any dish with too much of vegetables in them. I would always divert to my sugary sweets and fatty meals – which to know surprise, caused me to develop diabetes and become overweight.
So what caused my change of heart? Well, I was 18 and overweight when I had a terrible health scare. My blood sugar and cholesterol levels shot through the roof which made me collapse and fall into a coma for 2 and a half weeks. I always think of it as my harsh wake-up call to get my act together and start taking charge of my health and my life. I mean, my parents even call it a miracle that I woke up.
I started eating healthier and incorporating fruits and vegetables in my diet. I tried different healthy recipes to spice up my weekly meals, but of course, some good things never really last. Because after a few years of eating plain, bland food I again have gotten tired of it. This was when I was introduced to the spiralizer. My friend gave me one for Christmas and I got really intrigued by it. I initially thought that all it could do is to make zucchini noodles or zoodles, but to my surprise, it can actually do so much more. Soon I was whipping up tasty, healthy and really practical spiralizer recipes one after the other.
Now, I am able to maintain my weight, take on a vegan lifestyle and manage to stay more energized and healthier! This is also the reason why this book was written.
