    Introduction – What is Canning?

    Canning is a step ahead of cooking. The method of canning food products include applying heat to the food that you can about to can or preserve in a glass canning jar in order to prevent the natural process of decay and spoilage. In order to can a food item you need to remove air bubble from the jar and create an impenetrable seal that will not allow air to enter the preserved food. There are two methods of home canning:

    1. Pressure canning

    2. Waterbath canning

    Which Method Should You Use?

    The preserving method that you use depends on the kind of food item that you are trying to preserve. The best method for beginners is waterbath canning because it is as simple as boiling water. Following are the details about both methods.

    Waterbath Canning

    Waterbath canner is a large pot that can hold enough water to easily submerge 7 quarts jars. The waterbath usually comes with a rack that makes it easier for you to hold and handle the jars when you keep them in or take them out of the water bath. Waterbath canners are usually made of porcelain covered steel or aluminum.

    Water bath canners are ideal for preserving food items that are acidic. Pressure canning method must be used in order to can food items with low acidic levels. The canning recipe will help you decide which method is appropriate to use while canning different food items.

    Assembling the Equipment

    Things you will need:

    1. Waterbath canner

    2. Preserving jars made of glass

    3. Some kitchen utensils such as dish rags, large spoons, knives, measuring cups, sauce pans, measuring spoons, ladle, spatula (non-metallic) and a cutting board.

    4. Ingredients that you want to preserve according to the recipe.

    First Step

    The first thing that you need to do in order to start canning is to wash the glass jars, bands and lids in soapy and hot water ensuring that you rinse each and every jar with great care.
