China is the only country which cultivates and produces all six great Chinese Tea families, having over six thousand vintages, at least three methods of steeping (Zhong, Yixing Teapot, Large Porcelain Teapot), and the longest tradition of using tea as both food and medicine.
Chinese teas are loosely classified according to the methods used by Tea Masters in processing freshly harvested tea leaves. Apart from non-oxidized white, yellow, and green teas and fully oxidized black teas (correctly referred to as Qi-Hong or Red Teas), widely consumed Chinese teas include semi-oxidized Oolongs, compressed and fermented Pu-Ehrs, as well as the host of scented, flavored, and smoked
