Frittata

Protein-packed eggs are at the heart of this superbly versatile meal, providing all your essential amino acids. This frittata contains only 5g of carbs, all sourced from vegetables, which means if you eat it before training it won’t stop it being a fasted session. But serve it with some form of carbohydrates – such as bread – and it doubles as a post-ride vegetarian protein hit.

INGREDIENTS

SERVES 2

• 300g long-stem broccoli• 1 tsp oil• Large pinch chilli flakes• 4 roasted red peppers from a jar, sliced• 8 eggs, beaten• 4 tbsp milk• Handful of basil leaves, to serve
