GOS FAND LAWANG

serves 4

110g yellow split peas
250ml sunflower oil
1 large brown onion, finely diced
3 garlic cloves, grated
1 tbsp grated fresh ginger
3 fresh long red chillies, thinly sliced, plus extra, halved lengthways, to serve
130g plain yogurt
2 tsp ground turmeric
1kg lamb shoulder, bone in, diced
2 large ripe tomatoes, finely diced
1 lime or lemon, thinly sliced
½ red onion, thinly sliced
2 tbsp fresh coriander leaves

1 Cover the split peas with water in a bowl and set aside to soak for 2 hours. Drain and parboil
