We have a, truly incredible guest on the show today. I have no idea how this happened, but we have Nakamura-san, Shigetoshi Nakamura from Nakamura NYC on the show today. For those of you who are unfamiliar with Nakamura-san, he is widely considered to be one of the top ramen chefs in the United States. He opened his first shop at the age of 22 in Japan and became known as a rising star after being featured in ramen magazines. He then went on to help his brother create the menu at the mega-successful ramen chain Afuri.
In this episode we talk about his history with ramen, his philosophy on what chefs should focus on when making ramen, the differences between making ramen in a restaurant and making ramen at home, and where he thinks and hopes ramen will go in the west.
This was an incredibly insightful interview with a true master of ramen. I learned a lot and I hope you enjoy this one. Alright here is chef Shigetoshi Nakamura.
