In today’s episode I still down with one of the OGs of the little internet ramen community. Alex park, who also goes by @darth.gastrameny on Instagram, is a traditionally trained chef who has been the ramen scene for around 10 years. With 17 years working in professional kitchens, Alex has skills that many of us home ramen cooks are pretty far from developing on our own and it really reflects in the ramen he makes. In this episode, he talks about his philosophy for making ramen and what senses he uses to critique his own cooking. He also opens up on the realities of working in these high-pressure kitchen environments.  It’s rare for anyone to be as honest as Alex is in this interview so for any aspiring chefs out there, this might be a great listen for you.
