Peppermint Chocolate Truffles

Ingredients:

200g dark chocolate (70% cocoa solids), chopped

100ml double cream

1/2 teaspoon peppermint extract

200g white chocolate, chopped

Crushed candy canes, for coating

Instructions:

In a heatproof bowl, combine the chopped dark chocolate and double cream. Place the bowl over a pan of simmering water, making sure the bottom of the bowl doesn't touch the water.

Stir until the chocolate has melted and the mixture is smooth.

Remove the bowl from the heat and stir in the peppermint extract until well combined.

Let the mixture cool slightly, then cover the bowl with plastic wrap and refrigerate for about 2 hours, or until firm.

Once the mixture is firm, use a spoon to scoop out small portions and roll them into balls.

Place the balls on a baking sheet lined with parchment paper and return them to the refrigerator to chill for another 30 minutes.

In a separate heatproof bowl, melt the white chocolate in the same manner as the dark chocolate. Remove from heat and
