Tips for Baking the Best Cookies
General
Recipes were tested with canola oil nonstick cooking spray.
To reuse baking sheets for same cookie batch, wipe pans with wet paper towel, dry, and spray lightly with cooking spray (wipe with paper towel to evenly distribute).
When mixing dry ingredients, use a bowl that allows for mixing room. Stir ingredients thoroughly to ensure uniform cookie appearance and flavor.
An electric mixer was used for the dough in many of the recipes (just until ingredients were incorporated) but frostings were mixed by hand.
If dough is too sticky to shape into balls, use cooking spray on hands (or cover dough and refrigerate at least 1 hour).
Fill cookie jar with cookies and freeze the rest. Put wax paper between cookie layers when freezing. Leave cookies uncovered while thawing.
Nutrition information is an estimate and will vary slightly depending on factors such as product brands, measuring techniques, and cookie size.
Scoops & Spoonfuls
Small Scoop
Orange-handled scoop (#100) with 0.32 oz. fluid capacity (10 ml or about 2 teaspoons). Makes 1-inch dough balls.
Medium Scoop
Plum-handled scoop (#70) with 0.46 oz. fluid capacity (14 ml or just shy of 1 tablespoon). Makes 1 1/4–inch dough balls.
Large Scoop
OXO Good Grips medium scoop with 1 oz. fluid capacity (30 ml or about 2 tablespoons).
Teaspoonful
Equivalent to about 2 1/2 measuring teaspoons of dough. Use small spoon from tableware drawer.
Rounded Teaspoonful
Equivalent to about 1 measuring tablespoon of dough. Use small spoon from tableware drawer.
Heaping Teaspoonful
Equivalent to about 4 measuring teaspoons of dough. Use small spoon from tableware drawer.
Tablespoonful
Equivalent to about 2 measuring tablespoons of dough. Use large spoon (soup spoon) from tableware drawer or large scoop.
Ingredients
Brown Sugar
Recipes were tested with light brown sugar, except when dark brown sugar is indicated.
Cocoa
Lightly stir cocoa, then spoon into measuring cup and level with straight edge. Sift into dry ingredients to prevent cocoa clumps on top of baked cookies.
Flour
Lightly stir flour, then spoon into measuring cup and level with straight edge.
Granulated Sugar
Scoop sugar with measuring cup (or measuring spoon) and level with straight edge.
Oats
Recipes were made with quick-cooking oats (not instant). Pour oats into measuring cup and level with straight edge.
Powdered Sugar
Pour powdered sugar into measuring cup and level with straight edge.
Sour Cream
Lightly stir sour cream, then spoon into measuring cup and level with straight edge. Fat-free and light sour cream are interchangeable in recipes, but making a substitution will change the recipe’s nutrition information.
Vanilla
Recipes were tested with Baker’s Imitation Vanilla Flavor, except when indicated.
White Baking Chips
Recipes were tested with Nestle White Chips, not white chocolate chips.

(6) Drop dough by rounded teaspoonfuls (or medium cookie scoop) 2 inches apart on prepared baking sheets.
(7) Bake at 350 °F on center rack 8 to 10 minutes or until set. Remove from pan; cool on wire rack.
