    How will you start your day?"

    Egg Feta Wrap

    This healthy sprouted wrap is great for a morning meal or anytime of day.

    Ingredients:

    • 1 large Ezekiel tortilla

    • 1 egg fried in organic butter

    • 1 Tbs Feta cheese (to your taste)

    • 1 or 2 Tbs Brushetta

    (Trader Joe’s is my favorite)

    • 2 Tbs Grapeseed Oil

    • 1/4 cup Arugula

    Recipe for homemade Brushetta on page 76

    Method:

    Step 1: Place between 1 - 2 Tbs (or less) Grapeseed oil to coat your frying pan.

    Step 2: Heat the tortilla in the coated pan on medium heat.

    Step 3: Turn again and again, so it doesn't get too crispy.

    Fry your egg in a separate pan, break the yolk and cook the egg thoroughly.

    Step 4: When the tortilla is done to your satisfaction, put the tortilla on a plate and place the fried egg on it.

    Step 5: Add the brushetta, and crumble a bit of Feta cheese on top.

    Step 6: Top off with fresh organic Arugula.

    Roll the tortilla and enjoy this amazing and oh-so-yummy wrap!

    Tip:

    Arugula is considered a bitter. And is oh-so-good for your liver. This yummy wrap is a family favorite.

    Option:

    If you don’t have brushetta handy and would like a South-of-the-Border flair, a Tbs of Trader Joe’s Salsa Verde makes a delicious option.

    This high antioxidant meal is a smart way to start the day.

    Raw oatmeal is great for you.

    Ingredients:

    • 1/3 cup (or one heaping handful) organic rolled
