INTRODUCTION
Seafood is prominently fish and shellfish that are eaten as food. It is a protein-rich food, low in fats and packed with essential nutrients, including omega-3 fatty acids, iodine, vitamin D, and calcium. No doubt, seafood is highly nutritious.
Omega-3 fatty acids, known as the good
fat, help to guard against heart disease and protect against some forms of cancer. Oily fish, such as salmon, trout, herring and tuna all contain high levels of Omega-3 fatty acids. Seafood is the only natural source of iodine. Iodine is important for neurodevelopment. It also aids thyroid function. Seafood contains very little salt and sodium, which is good, as high intake of these as been linked to high blood pressure, stroke and heart disease. Eating seafood will help you lower your salt consumption and boost your health.
Protein-rich seafood is low in calories and will help to nourish your muscles, prevent colds and flu and keep you fuller for longer. It also low in saturated fats, one major cause of high blood cholesterol. Since the human body cannot adequately produce the essential nutrients the body requires, seafood, particularly fish is a vital part of the diet.
Buying &Storing Seafood
Shop Wisely
Always buy fresh fish. The fresh fish you buy must be refrigerated or displayed on a well-iced bed. Select mild-smelling fish that looks vibrant and clean. The scales of the fish should be shiny and firm to touch. Avoid dull or discolored seafood or any which smell fishy or sour. If you want super fresh whole fish, choose one that is covered with a natural layer of slime. If there is no slime, it’s still a good fish but not super fresh. Check the package of the frozen seafood you wish to buy. Do not buy if the package is torn or open. This shows that the packaged seafood has been thawed and refrozen. Additionally, watch out for signs of frost or ice crystals on the package and avoid buying them.
Select seafood with care. Mussels should be heavy and closed. It is better to buy live oysters but if they are shucked, they should be fleshy and nearly translucent. Check the prawns before buying. They should be no black in their heads and be firmly connected to their body. Do not purchase if they smells like ammonia. Finally, do not be in a hurry; spend time to discuss with your fishmonger. It’s worth it at the end of the day.
Store Safely
Refrigerate your seafood immediately or keep well-iced until cooking time. This must not exceed 2 days after you buy it. Otherwise, wrap the seafood tightly in plastic and store in the freezer. However, if the fish has already been thawed, do not refreeze. Doing this may breakdown the fish tissue, making it go soggy. Below are a few tips for handling fresh seafood for storage.
Tips For Handling Fresh Seafood
Seafood must be handled with care because they are very perishable.
Fish
Fresh fish are either caught or bought. If caught, ice immediately in a well-iced chest. Initial icing requires at least 1-2 pound of ice to every pound of fish. Freeze immediately. Do not wait until it is almost spoilt before freezing. If you do, it will not be fresh, even when thawed, and this will affect the quality of food you prepare.
Shrimps
Ice shrimp by mixing well in ice. Ensure that you drain water from any ice that melts and replace immediately.
Crabs & Crawfish
Keep live crabs and crawfish cool and well-shaded with good air circulation. Live crabs should be stored in wooden crates that are covered with moist but clean burlap sacks. Crawfish should be stored in onion sacks. Live crabs or crawfish should never be put in sealed containers that are filled with water. This will kill them fast.
Oysters
Generally, live oysters are sold in burlap sacks. When you are buying them, ensure that the burlap sack it is being sold in is well-tagged. Take home and store in the refrigerator to preserve it quality and make it safe. On no account should you bury oysters in water, either fresh or ice as this could kill them. If you want to use a cooler, place the ice in the bottom, and then place the oysters on top.

Freezing Seafood
Always remember to freeze seafood immediately. This cannot be emphasized enough. The freezer temperature should be around 0°F (-18°C). Freezing seafood at home is very advantageous. It preserves and retains the fresh quality when thawed. Store the seafood in small packages and spread well in the freezer for rapid cold air circulation until frozen. Once they are frozen, you can stack or box them.
Fish fillet
To freeze fish fillet, place in a Ziploc bag. Before sealing the bag completely, force the air out through a tiny opening and then close and seal, pulling down tightly around the fillets. Spread the bag around the freezer until frozen. Do not put the fillets in a large container such as a milk carton together with water could damage the fillets.
