Thy Brother’s Keeper is a collection of recipes from the heart and soul gathered and contributed by home cooks to help raise money for a friend in need.

In March 2016, Jeffrey Harbuck suffered a massive stroke and spent nearly six months in the hospital in a coma and multiple complications from the stroke. During this time, his elderly mother, Lizanne, sat by his hospital bed, tending to him and waiting for God to heal him through the help of prayers from friends and strangers all around the globe. Jeffrey was the main financial support for his mother, so friends, family, and acquaintances came together to pool their culinary resources to compile this book of recipes to raise funds for Jeff and his mother.

While supporting a wonderful cause, readers of this collection will joy and delight in many family recipes passed down from generation to generation, as well as dishes created from family reunions, health needs, and just plain old love.

With nearly 400 recipes, Thy Brother’s Keeper tantalizes with soups and stews, homemade breads, creamy dips and sauces, salsa, and jams. Main dishes range from casseroles, enchiladas, chicken pie, barbecue, burgers, alfredo, tacos, and meatballs to name a few. And, mouthwatering side dishes created from fresh vegetables like spinach, squash, broccoli, rice, mushrooms, peppers, yams, beans, and more.     Dedication

    In March 2016, Jeffrey Harbuck had a massive stroke and suffered extensive complications from it such as kidney failure, coma, being on life support, pneumonia, and several other difficulties. At the time of his stroke, Jeff was working as a manager for a restaurant in Fairhope, Alabama, and was the primary caretaker and income source for his elderly mother, Lizanne. When Jeff was hospitalized and in a coma for an extended period of time, Lizanne had to rely on the kindness of her neighbors, the charity of her church, and the support of her daughters, Jennifer Keller and Marley Harbuck Gibson, and their families.

    In addition to his job, Jeff also formed and managed the Pre-Tribulation Rapture Forum on Facebook with over 30,000 members. A call out to prayer warriors reaped many good wishes, cards, letters, prayers, and support. People who only knew Jeff through a computer screen opened their hearts and wallets to contribute to a GoFundMe campaign to help Lizanne make ends meet while Jeff was hospitalized.

    Many others wanted to help out, but didn’t know how. Then, this cookbook was the God-inspired brainstorm of Patty Hull Gonzales, a member of Jeff’s forum, who approached Cathy Arnold, one of the forum administrators with the idea. Cathy ran the idea out to the members and it was well received. Additionally, Jeff’s sister, Marley, a published author and professional editor, reached out to the family’s friends and extended family with the idea, as well. A Facebook group was set up for people to contribute their home recipes so we could put this cookbook together as a gift of caring in hopes to help raise money for Lizanne and Jeff as he continues over a year later to rebound from his horrendous setback.

    Another member of the group, Dawn Glesener, offered her services as artist to photograph and design our beautiful cover with Cathy acting as the project manager, Jeff’s sister, Jennifer, as a proofreader, and his other sister, Marley as the advisor, editor, and publisher.

    This book has been a time-intensive labor of love from its inception to its completion. It is dedicated to Jeff and his mother, Lizanne. We desire for Jeff and his family to know he has not been, nor will he be, forgotten. We are trusting in the Lord for His will to be done in Jeff’s continuing recovery. Thank you to everyone who participated and all of you who purchase the book, give it as a gift, or help us spread the word.

    Finnish Oven Cake

    4 eggs, beaten with ¼ teaspoon salt added

    2/3 cup flour

    ⅓ cup sugar

    1 cup (two sticks) butter, melted

    2 cups milk or cream (or 1 cup of each)

    1.Preheat oven to 425 degrees. Grease a 9 x 13 baking pan.

    2.Mix eggs, flour, and sugar. Add melted butter and beat well.

    3.Add milk and cream and beat until smooth. Butter may not completely incorporate, so flakes of butter are normal. Mixture will be quite thin.

    4.Pour mixture into baking dish. Bake 25-30 minutes, checking at 20 minutes.

    5.Cook until puffy with center set and edges golden brown.

    6.Remove and cool on wire rack. Pancake will fall once it starts to cool and have more of a flat appearance.

    7.Serve with powdered sugar or maple syrup. Can also be served cold.

    Pannukakku is a Finnish oven cake or pancake pronounced BAH-noo-gock-goo, with the stress on the first syllable and short g sounds. Best served with jelly or jam.

    The Good Guest Frittata

    Extra virgin olive oil

    2-3 tablespoons butter

    2-3 small Yukon gold potatoes, peeled and chopped into cubes

    1 small onion, chopped

    1 deli slice prosciutto, ½ inch thick, cubed

    ½ cup cheddar cheese, shredded

    ½ cup Parmesan cheese, shredded

    3-4 garlic cloves, chopped

    10-12 fresh basil leaves, chopped

    8 eggs, beaten

    ½ cup half and half

    Salt and pepper to taste

    1.Preheat broiler.

    2.Using a non-stick skillet that can transfer into the oven, heat olive oil to medium.

    3.Add chopped onions and stir well. After 1-2 minutes, add chopped potatoes and season with salt and pepper to taste.

    4.Sauté mixture on medium to medium high, stirring so nothing sticks, until potatoes and onions are cooked through for about 10-12 minutes.

    5.Add in garlic and cook additional 2-3 minutes, but don’t let garlic burn.

    6.Toss in cubed prosciutto pieces and stir into potato, garlic, and onion mixture. Spread everything out evenly in the pan and add 2-3 tablespoons of butter.

    7.In a large bowl, whisk together eggs and half and half. Add both cheeses and salt and pepper. Sprinkle in chopped basil.

    8.Pour egg mixture over the cooked vegetables in the non-stick pan. Cook for 5-7 minutes to make sure it’s set. Run a rubber spatula around the edges to test cooking and doneness.

    9.Remove from stove top and place under broiler for 5-7 minutes, watching so it doesn’t burn.

    10.When browned and bubbly, take out of the oven and run the spatula around the edges again, shaking the pan to loosen the frittata.

    11.Invert a plate over the frittata. Using oven mitts, flip the pan upside down so the frittata slides out onto the plate.

    12.Garnish with a sprig of basil and a side of cool sour cream. It’s the best treat you can make for your weekend hosts that will always get you invited back.

    Caramel French Toast

    1 cup brown sugar

    ½ cup butter

    2 tablespoons light corn syrup

    1 loaf French bread, cut into 1-inch slices

    5 eggs

    1 ½ cups milk

    1 teaspoon vanilla

    1.Place the first three ingredients in a medium saucepan. Heat until blended.

    2.Spray 9 x 13 inch baking dish with non-stick vegetable oil. Pour hot mixture into baking dish. Place slices of bread closely together over caramel mixture and press.

    3.Beat eggs; add milk and vanilla and mix slightly. Pour egg mixture over bread covering each slice well.

    4.Cover baking dish with plastic wrap and refrigerate overnight.

    5.The next day, preheat oven to 350 degrees and bake dish uncovered for 30 minutes.

    6.Top with whipped cream, chopped pecans, or cinnamon.
