A recipe has no soul. You as a cook must bring soul to the recipe.
Southern cooking has really intimidated me for the longest time. As a matter of fact, every time I search for new recipes, I always skip past the southern comfort food section, just because I am so scared that I will make a complete mess and will not do the recipe justice.
Fearing that I would be an insult to my Southern roots, I’ve decided to leave the cooking to my mother and Mamie and just focus on the eating part. But when I left home and moved to the West Coast for work, I have missed their cooking so much that I ended up looking for restaurants that serve dishes that are close to home.
Of course, they didn’t taste the same as the dishes that I grew up with. They lacked the soul
– sad to say, what I ate didn’t comfort me at all.
When my mom visited me a few years ago, she let me in on her secret to Southern cooking. She said that I could use my canned beans, soups, sauces and cake mixes to make great tasting, soulful and really comforting Southern dishes! I was, needless to say, shocked! She also said all I needed was a casserole dish and I am good to go.
So, empowered by what she said, I began trying out Southern casserole recipes and they turned out great! My baked meals and desserts reminded me of home! Soon, I started sharing them with my friends and workmates and they all loved my creations! This was when I decided to share my recipes and experiences with you!
