Apple Pandowdy and Apple Spice Palmiers

MAKES 10 TO 12 SERVINGS

A sweet and simple filling, buttery spiced topping, and scoop of ice cream come together for one cozy dish.

4 pounds Granny Smith apples, peeled, cored, and sliced ¼ inch thick
2 teaspoons lemon zest
2 tablespoons fresh lemon juice
¾ cup firmly packed light brown sugar
¾ cup plus 1 tablespoon granulated sugar, divided
¼ cup cornstarch
3 tablespoons melted butter, divided
1 tablespoon plus ¼ teaspoon apple pie spice, divided
2 teaspoons vanilla extract
¾ teaspoon kosher salt
1 (14-ounce) package frozen puff pastry, thawed*
Ice cream, to serve

1. Preheat oven to 425°. Spray an 11x8-inch baking dish with cooking spray.
