    SPAGHETTI CASSEROLE

    6 SERVINGS

    1 large onion

    1 green pepper – chopped

    1 cup frozen Italian meatballs, sliced

    1 three-ounce package pepperoni – chopped

    1 32-ounce jar spaghetti sauce

    1 2 ¾ ounce jar mushrooms

    1 cup shredded mozzarella cheese

    1 12-ounce box spaghetti noodles

    Defrost meatballs, slice, and add onions, peppers, pepperoni, sauce and mushrooms. Simmer about 20 minutes. Cook noodles. Spray casserole pan with Pam. Layer spaghetti noodles first. Top with meat. Finish with cheese on top of meat. Bake at 350 degrees approximately 20 minutes.

    QUICK QUICHE

    4 SERVINGS

    Unfrozen pie shell

    1 cup milk (skim, 2% or half and half)

    1 cup cheese (e.g., Swiss, Cheddar, Mozzarella)

    1 egg

    ½ cup spinach

    salt and pepper

    (optional) 1 cup French fried onion rings

    Place cheese and spinach in the bottom of the unbaked pie shell. Beat egg, milk, salt and pepper together and pour over cheese. Bake for 20 minutes. Then sprinkle onion rings on top and bake approximately 15 more minutes.
