Souffle Cookbook - Jamie Patois
Introduction
Making the perfect souffle is a piece of art. The light fluffy texture seems unachievable to most novice cooks. However all that a souffle demands is attention to detail. Unlike other desserts and even main courses, souffle does not just include mixing all the ingredients together and popping it in the oven. Instead it calls for alot of whipping, whisking and ensuring that everything is well blended and frothy even before you begin baking.
The trick to making the perfect souffle is to ensure that there is no trace of egg yolk in your selected egg whites. Even a tiny trace of yellow in the midst of all that white can ruin your souffle and not cause it to fluff up and rise. The next important thing to keep in mind is to beat until the egg mixture starts to form peaks but it not too hard or unmoveable. The perfect consistency is achieved with practice.
Most people are familiar with either the classic cheese souffle or the simple egg souffle. Though both these recipes are evergreen, there have been many new innovations and additions to the way souffles are made. This book lists thirty one different ways in which you can make a souffle.
1. Mushroom Souffle
Souffles can be made more healthy and nutritious by adding a bunch of mushrooms in the midst. Mushrooms are high in protein so they compliment the eggs really well. Due to the high protein content, this recipe is perfect for breakfast.

4 Egg Yolks
3/4 Teaspoon Salt
1/4 Teaspoon Black Pepper
1/3 Teaspoon Grated Smoked Gouda
