Roasted stuffed mushrooms

Serves 4 Time to make 45 mins

8 large portobello mushrooms, stalks removed
¼ cup olive oil, plus extra for drizzling
Black pepper, to taste
1 shallot, finely diced
1 clove garlic, finely chopped
1 celery stalk, diced
1 red capsicum, diced
200g Greek feta, crumbled (or use a combination of your favourite cheeses)
1 teaspoon finely chopped fresh parsley leaves
1 teaspoon finely chopped fresh thyme leaves
½ cup grated parmesan

1 Preheat the oven to 200°C fan-forced. Line a baking tray with baking paper.
