✱ 1tbsp olive oil
✱ 1tbsp parsley, finely chopped
✱ 15g butter, softened
✱ 300g new potatoes
✱ 2 leeks, sliced into rounds
✱ 4 skin-on chicken thighs
✱ 150ml chicken stock
✱ 300g frozen peas
