Best-ever vegie burgers

Haloumi vegie burgers

✔vegetariangluten free

80g haloumi, grated
½ cup frozen peas, defrosted
90g chopped baby spinach leaves
1 zucchini/courgette, grated
¼ cup roughly chopped fresh mint leaves
2 cloves garlic, crushed
2 large carrots, grated
1 egg
4 gluten-free wholegrain burger buns, halved
4 large cos or iceberg lettuce leaves
2 radishes, thinly sliced
1 avocado, sliced
12 pea sprouts

Tahini dressing

½ cup reduced-fat
Greek-style yoghurt
2 tablespoons gluten-free tahini
2 tablespoons lime juice

1 To make the tahini dressing, place all ingredients in a small bowl, mixing to combine.

Place haloumi, peas, spinach, zucchini, mint, garlic
