1 red onion
500g chicken mince
1 teaspoon ground cumin
1 egg
1 tablespoon wholemeal
spelt flour
45g baby spinach leaves,
finely chopped
4 seeded bread rolls, halved,
toasted
¹⁄³ cup roasted pepper and
eggplant pesto
1 x 225g can beetroot, drained
1 cucumber, thinly sliced

1 Thinly slice half the onion and finely chop remaining half. Place chopped onion in a large mixing bowl. Add mince, cumin, egg, flour and spinach. Season with freshly ground black pepper, mixing well to combine. Roll mixture into four patties.
