Pasta salad can be a nutritious Lunch with just a few healthy tweaks. The legumes add a fibre fix, a hit of protein and even an extra serve of veg to this bowl. Choose wholemeal or spelt pasta over regular pasta for up to three times the dietary fibre. And skip the mayo (which is high in saturated fat) and opt for a dressing made with extra virgin olive oil – full of heart-healthy monounsaturated fatty acids.
