Pesto pork with sautéed cabbage
You can swap the pork for skinless chicken breasts if you prefer.

200g trimmed lean pork medallions Frylight Olive Oil Cooking Spray
1tsp olive oil
400g shredded cabbage and leek mix
4tsp pesto Lemon wedge
Season the pork medallions with salt and pepper. Spray a small frying pan with Frylight and cook the pork medallions over a medium heat for 3-4 mins each side, until just cooked through and nicely
