Roast salmon and new potatoes with salsa verde
Looking for a simple, all-in-one meal that’s stylish enough for entertaining? This gorgeous and flavourful spring dish could be just the thing.
Serves 4 • Ready in 40 mins
1tbsp olive oil, plus extra for brushing
500g baby new potatoes, larger ones
halved
130g pitted black olives
200g asparagus, trimmed and halved
4 lemon slices
500g fillet of salmon
1tsp chilli flakes
For the salsa verde:
2 garlic cloves
2tsp capers, drained and rinsed
2tbsp parsley leaves
2tbsp mint leaves
100ml olive oil
1½tbsp red wine vinegar
2 anchovies in oil, drained
Watercress or other salad leaves,
to serve
1 Preheat the oven to 200C/Gas 6. Brush a large, shallow baking tray with oil, place the potatoes on the tray, season and roast for 10 mins.
