Tamagoyaki

 Makes 1 generous omelette

Tamagoyaki is a sweet Japanese rolled omelette; it has a very delicate texture and is often seen on top of nigiri or in vegetarian sushi. Traditionally, it is cooked in a special rectangular pan; for this recipe, we have used a regular 25cm / 9.8" round frying pan.

• 2 large free-range eggs
• 1 tbsp mirin
• 1/2 tsp tamari or soy sauce
• 1 tsp olive oil, for frying

1. In a small bowl, vigorously whisk together the eggs, mirin and tamari until bubbly.

2. Heat a large frying pan over medium heat. Once hot, swirl the oil around the pan.

3. Pour the beaten eggs into the pan and swirl continuously around the pan in a circular
