    A Word for Mothers

    Cooking is an exciting experience for kids. Whether they are making chicken alfredo or chocolate chip cookies, the act of cooking provides an instant entry into the adult world.

    To be a successful cook, children should begin cooking with simple recipes. I have researched and tried most of these recipes in my classes, with students or at home with my grandkids, and anyone can be successful as a beginning cook.

    If a beginning cook attempts too much to begin with, they become frustrated. In my cooking classes, we cooked once a week for ninety minutes, and we prepared one dish most of the time. Some students managed their time well and cooked more than one dish. And you would find that most of the recipes found in this book could be completed and kitchen-cleaned in ninety minutes or less.

    It is very important for kids to learn the technique of cooking—the order in which ingredients are added, kneaded, mixed, etc. But far from these techniques being a bore, I find that kids really enjoy learning them—particularly when there is a clearly explained reason and purpose behind them.

    For example, one week, my cooking class learned to make scrambled eggs. They carefully broke the eggs into a bowl and beat them lightly with a wire whisk. At the same time, we discussed the other methods of beating eggs and the occasions upon which they should be used. In the next class, the students built on their knowledge when they prepared chocolate chip cookies. They used two whole eggs and creamed them with sugar and butter, then they added the dry ingredients and chocolate chips. All the time, they were developing new skills and learning new techniques and thoroughly enjoying themselves in the process. Cooking can be fun when you allow the kids to be part of the planning process. We chose our cooking experiences together as a team, and my students loved my class.

    Kids are eager to try the tools of cooking—from simple measuring spoons to complicated utensils. Hand a ten-year-old a professional pastry bag with tips and tubes to design rosettes and leaves, and watch his/her interest rise. The routines of cooking, which many adults take for granted, are exciting adventures for kids. Although you and I may pay little attention to
