Kayla Gorrell is a plant based expert who has helped dozens of clients improve their well-being through individual coaching, workshops and online programs. She holds a certficiate in Plant Based Nutrition form eCornell and is a certified health coach from the Institute of Integrative Nutriton. She is also a group fitness instructor who mainly teaches spinning/indoor cycling, a yogi and a former distance runner. She will make your transiton to a whole foods plant based diet simple and delicious. Her clients are often surprised at how easy and satisfying her recipes are. They also love the volume of food they can eat, so hunger is not an issue. Quite a few of them decided to either be fully plant based or to at least incorporate more whole plant based foods into their diets.

    Introduction

    Have you ever considered eating a plant based diet? Have you ever tried it for a period of time and then returned to more traditional fare? Many have heard of the vast benefits of eating a plant based (aka vegan) diet. In spite of the numerous research studies linking a whole foods plant based diet to healthy body weight, better looking skin and hair and significantly lower risks of developing heart disease, diabetes, hypertension, cancer and a host of other ailments, many shun it thinking its too restrictive, too difficult and too expensive. Some have tried it temporarily, only to revert to their former ways, due perhaps to lack of direction, support and information.

    What if I told you that you can do it? What if I told you that it can be simple, affordable and fulfilling. If you continue reading, I will tell you exactly how I did it and am doing it and how I have helped friends and clients figure it out too.

    It was around age 12 that I began paying attention to food as it related to health and physical appearance. My mother was always very health conscious and I grew up eating vegetables, fruits,
