The Food Intolerances Substitution Guide - Zia L. Robles Hernandez, ND
INTRODUCTION
Dear Reader:
First, I would like to thank you for your interest in the following pages of this guide. The following are food substitutions I have compiled over the years. Along with my recommendations, is more in-depth information I have considered in choosing or not choosing certain substitutions.
My goal has been to make any recipe - whether new or familiar - in a way that all of my family can enjoy without worrying about having a food intolerance present in the ingredients. I had been asked several times to come up with a recipe book - which I did start doing, but in the process of gathering recipes, writing down successful experiments and re-doing common recipes, I realized that the tool that ultimately helped me the most, is KNOWING how to substitute unacceptable
ingredients in just about any given recipe.
How to use this guide:
Cooking - who needs it??? well, most of us - for some it’s an unfortunate task that needs done - for others, it’s a joy and hobby. For me, it’s been a little bit of both... yes, it can be a chore - particularly when it is just you and you are not too particular about what you eat - or, you have a family that is always wanting their meals a la carte
... been there, done that. My solution? If I’m cooking, it’s what gets served and what gets eaten - if you don’t like it, you go and make yourself something to eat for yourself but I will always make enough for my household to eat
