    Chapter 1 - Beef/Lamb/Veal Main Dishes

    Barbecue Beef

    Combine this beef with veggies, and enjoy the taste.

    Preparation time: 15 minutes

    Cooking time: 9 - 11 hours

    Servings: 20

    Ingredients:

    64 ounces boneless beef chuck, arm, rump or pot roast

    4 fresh garlic cloves, minced

    4 stalks celery, sliced

    1 cup onions, thinly sliced

    1 1/2 cup ketchup

    2 medium Barbecue sauce

    1/4 cup Grandma's Molasses

    1/4 cup apple cider vinegar

    2 tablespoons prepared yellow mustard

    1/4 teaspoon chili powder

    1/4 teaspoon black pepper

    Instructions:

    1. Remove all the fat from the beef.

    2. Add beef to the slow cooker.

    3. Add in the vegetables (garlic cloves, sliced celery and onions).

    4. Stir the remaining ingredients thoroughly with a whisk, and then pour directly on the vegetables and beef.

    5. Cover the slow cooker, cook on low 8 to 10 hours, use two forks to shred the beef in the slow cooker, stir thoroughly and cook for additional 1 hour.

    6. Serve on whole wheat or baked beans.

    Beef Roast with Vegetables

    You can’t afford to resist the taste of this beef roast, yummy!

    Preparation time: 10 minutes

    Cooking time: 6 hours

    Ingredients:

    40 ounces beef roast, English or Cross Rib cut

    5 red skins new washed potatoes, quartered

    1 peeled rutabaga, chopped

    1 large peeled parsnip, chopped

    2 garlic cloves, sliced in half

    3 medium baby peeled carrots

    1 chopped onion

    1/2 teaspoon salt

    1 teaspoon black pepper

    1 tablespoon flour, multi-purpose

    15 ounces pureed tomatoes, non-salt

    1 teaspoon dried thyme

    1/2 teaspoon dried rosemary

    1 bay whole leaf

    Instructions:

    1. Add the potatoes, chopped rutabaga, parsnip, garlic cloves, carrots and chopped onions in the slow cooker.

    2. Rub the two parts of the beef with salt and black pepper.

    3. Preheat a large pan to a normal high heat.

    4. When pan is hot, apply a cooking spray.

    Beef and Mushrooms

    1 pound beef stew meat, lean

    8 oz. fresh whole or sliced mushrooms

    1 can cream of mushroom soup, reduced-fat

    1 packet onion soup mix, dry

    Instructions:

    1. Over a medium heat, brown the beef in a skillet.

    2. In a 4 qt. slow cooker, place the meat.

    3. Directly over the beef, add the sliced or whole mushrooms.

    4. In a mixing bowl, add the onion soup mix, water and mushroom soup together, mix thoroughly.

    5. Pour the soup mixture directly over beef and mushrooms.

    6. Cover and cook on low 6 to 8 hours or on high for 3 to 4 hours.

    Pulled Barbeque Beef

    Ingredients:

    48 ounces beef roast, boneless

    1 tsp garlic, dried

    1 tsp onion, dried

    Salt and pepper to taste

    18 ounces Sweet Baby Ray's Barbeque Sauce

    Instructions:

    1. Add the boneless beef roast to the slow cooker.

    2. Sprinkle the dried onion and garlic directly on roast.

    3. Add salt and pepper to taste.

    4. Pour the barbeque sauce on the meat.

    5. Cover with a lid and cook on minimum heat for about six to eight hours.

    6. In order to shred the meat, remove it from the slow cooker.

    7. Return it back to the slow cooker after shredding with a fork.

    8. Cover the slow cooker and cook on low heat for additional one hour.

    9. Serve it warm.
