Vicarious. This is the best word to describe how I am living when I see the creations from Kellen Bradford’s kitchen. After one bite of his dish, I know I must be living through someone else to taste something so delicious. Not only is his cooking a work of art, it is equally as delicious. Through his cookbook, many more people will be able to live vicariously through his delectable dishes in their own kitchens.
I have known Kellen for several years now. The first Kellen creation I experienced (I say experienced because it is an experience) was a lasagna dinner and tiramisu. Sounds simple? Wrong. To say he created the best lasagna and tiramisu I have ever eaten is no exaggeration. A mutual friend who studied in Rome, Italy, for five years testified that he had not eaten a better tiramisu during his entire tenure in Rome. Kellen did not leave any detail unfinished in his dinner that evening, and I know this cookbook has been compiled on the same level of diligence. Crafting delectable dishes is Kellen’s passion, and he has chosen to share this passion with the world.
I am not the world’s best cook and am nowhere close to the level of Kellen; however, this cookbook gives me the opportunity to appear to be as competent a chef as Kellen. Having a well stocked pantry is essential to any kitchen no matter where your skills are. There are some items that are necessary for those times when you are in a pinch, but also when you don’t have time to go to the store. So here are some basic pantry staples that will help you get through those last minute dinners.
Pasta: pastas are a good pantry staple for meals when you are in a pinch. My suggestion is to have several different types of pastas so that you will have several different options. You have short cut pasta such as macaroni, cavatelle, farfalle, or orzo. Some long cut pasta such as fettuccine, spaghetti, tagliatelle, bucatini, or linguini. Keep lasagna noodles and shell pasta on hand as well. Frozen pastas are good for a dinner time pinch such a tortellini etc.
Grains: grains are a great way to bulk up your pantry. Also they add a wide variety of items that can be used in sweet and savory applications. Let’s start by covering rice; there are several different types of rice. Short grain, medium grain, long grain, brown, white, parboiled, etc. it can become a bit daunting and confusing. So here’s how I go about buying rice, get a long grain rice that you can use multipurposely. This will save
