Herbes de Provence
Herbes de Provence is a dried herb blend made from plants that flourish in southern France, but a canonical recipe doesn’t exist. Commercial producers and home cooks make it with a variety of herbs and often include spices such as fennel, coriander, and/or white pepper. It’s used to season traditional regional dishes, such as ratatouille and chicken Provençal; we also love its summery, floral flavors with grilled poultry or pork or in vegetable soups.
