Simon is a solo parent living in Oroquieta City, Misamis Occidental, Philippines with his two children, Jean, 8 years old and Trevor 6 years old. Jean and Trevor have a condition known as G6PDD; Jean has a milder version while Trevor has a much more severe version. Because of this condition they have to be on a restricted diet of mainly unprocessed foods, with no legumes, food colorings preservatives or other additives. Simon makes and prepares all of their food from scratch, using raw, organic produce. Otherwise, they are healthy, happy children, enjoying a modest, relaxed lifestyle in a semi-rural area of what is known as the City of Good Life in the Philippines, a warm, friendly city, blessed with very little pollution and a very low crime rate in a tropical area with a temperature of about 30C all year round, it is protected from typhoons and other harsh conditions found in other parts of the country.Simon is 58 years old, a New Zealand Born Australian a retired Chef and Entrepreneur. His hobbies include organic gardening, raising free range chickens, pigs, fish and cattle for personal use, making and preparing all their own foods from scratch from wholesome ingredients and living a naturally healthy lifestyle. They enjoy practicing Tae Kwondo, water sports, fishing, diving and boating; have traveled to Malaysia, Singapore, Vietnam, India, Hong Kong, and China. He is now concentrating on this children’s schooling and compiling eBooks on topics related to g6pdd, arthritis and healthy living, to share with others their experiences and knowledge on how to live long and happy lives with Arthritis and G6PDD.

    The recipes in this book are created for people who have arthritis, people who are likely to develop arthritis because of a family history of arthritis or people wishing for a diet that helps to avoid arthritis. Scientists have recently discovered that Arthritis is caused by a virus, a virus not a natural degenerative condition, that many Doctors and Specialists would like us to believe. This virus not only affects the immune system, but takes it over, causing it to attack weakened or damaged joints, causing pain and inflammation as well as inhibiting the immune system's natural ability to maintain joints and ligaments. This virus is able to develop because of peoples diets, many of the natural foods that our bodies have evolved to eat and use over thousands of years have been changed by the methods used to cultivate and process our foods.

    There are many types of food that can aggravate arthritis in some people, while other foods can soothe or help to reduce arthritis by providing the compounds our body needs to naturally control inflammation and pain. Some peoples arthritis is affected or aggravated by foods from the deadly nightshade family, peppers, tomato, potato, celery, eggplant (Aubergine), tobacco, etc., while others are affected by coffee, cheese, eggs or egg whites, chicken, pork, pawns or red wine, artificial or chemical food colors flavorings and preventives or combinations of different foods. Everyone’s metabolism is different and we can all react to different foods or combinations of food differently, so it is a good idea if you think a certain food is affecting your arthritis to refrain from taking that particular item for a period of time, say a month and see if it makes any difference. Then try eating it again and see if you notice any change, you will then know for sure if it affects you or not. It is important to know that many foods can affect medications, some foods like citrus and apple juice can block the effect of some painkillers because of the acid they contain, while other foods can magnify the effects of some drugs. If you are taking any medication, check with your Pharmacist, Doctor or search the internet to find out what or if anything will affect your medications.

    Some food items in our recipes may affect you so if you come across an ingredient you do not wish to use, then it can be substituted or omitted or changed to suit your taste and needs, the recipes are all meant as a guide and are all adaptable.

    Many processed or semi-processed foods have additives that are likely to cause irritation and affect people with arthritis, so by using live organic, unprocessed foods wherever possible, because they are free of additives and are unaltered by the processing procedures, as well as often containing other natural compounds within the same plant or plants that offset any negative effects, they may not affect your arthritis. By eating a good broad based balanced diet of wholesome foods that contain a multitude of different compounds and substances that occur naturally within different food groups one substance that is, by its self of concern for people with arthritis can be counteracted by other natural compounds in other foods, so they may not affect you. Most traditional recipes have evolved over time, often many generations, not only because of the flavor they have, but also because of the compatibility of the individual ingredients, making up those recipes to complement and provide a balance or control both increasing their positive effects and safeguarding us against any harmful effects or adverse effects that could be experienced if consuming some types of foods on their own. Isolating the active ingredient in a herb or spice and trying to use it alone tends to diminish its effectiveness because of the other compounds naturally associated with them in their original plant form that our bodies have evolved using. Many of today's drugs used to treat arthritis are derived from plants, but substantially changed by processing.

Eating a diet of processed foods, especially grains, sugars, and processed vegetable oils, preservatives, artificial flavorings, sweeteners and processed salts severely affects the body’s ability to repair and maintain itself and inhibits the immune system’s ability to combat infections and viruses.

    Factory farmed, grain fed livestock, contain an unnatural amount of omega-6 fats, because they are often fed hormones, antibiotics, growth stimulants and agricultural feeds that were grown using pesticides, herbicides fungicides, artificial fertilizers as well as waste products from food production, all of these unnatural substances are passed on to the consumer causing overall disruption to our bodies and the delicate systems nature has provided to protect us, resulting in an environment within our bodies where arthritis can manifest. Arthritis is a term given to a condition where joints are inflamed and painful, there are over 100 different forms of arthritis some well-known others not so common, but they can all be treated.     Often because of arthritis affecting peoples joints it is difficult to do many simple things in the kitchen, to prepare food and to use utensils, so many of the steps in our recipes have been simplified for this reason, we use an auger type juicer, easy clean type food processor, bench blender, and immersion mixer/blender as well as a stand type mixer with a food mincer attachment. Our kitchen sink unit has a flexible spray hose attachment for the easier rinsing of dishes, equipment and foods, we use an automatic 3 stage dishwasher with baking soda as the cleaning agent and white vinegar for rinse aid (many modern dishwashers are fitted with plastic parts in their rinse aid dispenser that can react with vinegar so we
