SMOKEY POPCORN CAULIFLOWER

Cauliflower is such a popular vegetable in many different parts of the world but I think this way of preparing it takes the cake. I love the crunchy batter coating and perfectly tender middle. And it works perfectly with my Tofu Mayo on page 86.

1 cup chickpea flour1 cup plant-based milk1 teaspoon salt2 tablespoons smoked paprika1 teaspoon dried oregano1 teaspoon garlic powder1 teaspoon cracked black pepper1 cauliflower, chopped2 cups panko breadcrumbs, gluten-free optional1 tablespoon olive oil
