CRUNCHY THAI SALAD WITH PEANUT TEMPEH

• 200g rice noodles • 2 carrots • 4 spring onions • 1 yellow pepper • 1/2 a small red cabbage • 200g tempeh, sliced • 100g pack baby spinach leaves • 25g fresh coriander, roughly chopped • 25g fresh mint, roughly chopped • 1 tbsp maple syrup • 3 tbsps crunchy peanut butter • 1 clove garlic, • Juice of 1 lime • 1/2 tsp grated ginger • 1 red chilli, finely chopped • 1 tbsp soy sauce • 1 tbsp sesame oil • 1 tsp brown sugar
