Divine SUMMER SWEETS

Mango magic

Have an abundance of mangoes? Use perfectly ripe mangoes in this recipe, use unripe mangos in pickles or salads and overripe ones in compotes or chutney.

Lemon, lime & mango no-bake cheesecake

SERVES 12 PREP + COOK TIME 1 HOUR

200g Anzac biscuits
100g macadamias, toasted lightly, coarsely chopped
100g butter, melted
4 eggs, separated
1 cup (220g) caster sugar
2 teaspoons finely grated lemon rind
2 teaspoons finely grated lime rind
½ cup (125ml) lemon juice
½ cup (125ml) orange juice
3 level teaspoons gelatine
¹/³ cup (80ml) water
500g cream cheese, softened
450ml cream
1 teaspoon vanilla bean paste Fresh mango, passionfruit, for decorating

1 Invert the base of a 24cm springform
