For easy removal of cheesecakes and delicate cakes cooked in a springform pan, turn the base of the pan upside down before locking it in place. It’s the slight ridge on the base that can make removing the cheesecake difficult.

The reverse side does not have a ridge.

Lemon, lime & mango no-bake cheesecake

SERVES 12 PREP & COOK TIME 1 HOUR (+ REFRIGERATION TIME)

200g Anzac biscuits
100g macadamias, toasted lightly, coarsely chopped
100g butter, melted
4 eggs, separated
1 cup (220g) caster sugar
2 teaspoons finely grated lemon rind
2 teaspoons finely grated lime rind
