Sweet potato pasta with walnut ‘chorizo’ Vg

This sweet potato dish is a great midweek meal. You can make the chorizo and serve it with any pasta at all. I love to use bean and quinoa pastas as a gluten-free alternative, and this sweet potato pasta is a great way to enjoy the benefits of bold and bright sweet potatoes in your day. The walnut ‘chorizo’ celebrates walnuts, a Mind Food star ingredient, this time spicy and savoury, packed full of flavour and giving great texture to this smoky pasta dish, but can also be used in many ways, in tacos, salads and as a topping to baked potato.

• 1 sweet potato, washed, dried and spiralized or peeled into long thin ribbons• 1 tbsp plant-based butter• 1 garlic clove, crushed
