Prawn, broccolini & peanut dan dan noodles

SERVES 4 PREP + COOK TIME 45 MINUTES

375g broccolini, trimmed, halved
300g fresh thin egg noodles
2 tablespoons coconut oil
16 uncooked large prawns, shelled, deveined, tails intact
¼ teaspoon dried chilli flakes
2 teaspoons finely grated fresh ginger
1 ½ cups (375ml) chicken stock
¼ cup (60ml) rice wine vinegar
¼ cup (60ml) soy sauce
¼ cup (70g) tahini paste
1 teaspoon Sichuan peppercorns, crushed coarsely
1 tablespoon brown sugar
¹/ ³ cup (50g) roasted unsalted cashews
2 spring onions, sliced
