Miso tofu soba noodle soup

160g dried soba noodles
2 cups salt-reduced vegetable stock
1½ tablespoons white miso paste
3cm-piece fresh ginger, peeled, thinly sliced
2 bunches broccolini, trimmed, cut into 4cm lengths
1½ cups frozen corn kernels
1 large bunch choy sum, trimmed, cut into 4cm lengths
300g firm tofu, cut into cubes
Fresh coriander leaves, to serve
Lime wedges, to serve
