Moroccan chicken tagine

400g chicken breast fillets, diced
2 teaspoons Moroccan seasoning
400g Kent pumpkin, peeled, cut into 1.5cm dice
1 x 400g can no-added-salt chickpeas, drained, rinsed
1 x 400g can no-added-salt chopped tomatoes
1 cup wholemeal couscous
240g baby spinach leaves
200g reduced-fat Greek-style yoghurt, to serve

you’ll need…

+ baby spinach leaves

Lightly spray a large frying pan with fitted lid with oil and heat over medium heat. Add chicken and seasoning and cook, stirring, for 2 minutes or until browned. Transfer chicken to a plate, cover with foil and set aside.
