Summer Salads to impress

Thanks for the invite to Saturday’s braai – what can I bring?” And then the dreaded answer: “Bring an interesting salad… Oh, and I still wanted to tell you that Peter has a new girlfriend and she is vegetarian – do you think you can make your salad work for her?”.
