Beef and black bean stew

» SERVES 4

400g lean minced beef
300g tinned black beans, drained and rinsed
2 tbsp salt-reduced tomato paste
1 tbsp sweet paprika
1 red onion, thinly sliced
1 red capsicum, seeded and thinly sliced
1 green capsicum, seeded and thinly sliced
1 cup (250ml) salt-reduced beef stock
4 cobs cooked sweetcorn, husk and silks removed, kernels sliced off
80g avocado, finely chopped
1 long green chilli, seeded and thinly sliced
Lime wedges, to serve
Coriander leaves, to serve
