The easiest workaround is to create the signature in another app like Notes, Drafts, or TextExpander complete with the image, and then copy & paste that signature into your email message. Jeff’s iTip: When a HomePod or HomePod mini is in a stereo pair, only one speaker talks to you, the left one.  But it isn’t always easy to tell which one is designated as Left, and that might not be the one that you want to speak Siri’s responses.
