This delicious baked oatmeal is loaded with fresh berries. It’s a quick and easy make-ahead breakfast that is also healthy. I used strawberries, blueberries, and raspberries, but choose whatever you like.

3 cups old-fashioned rolled oats
1½ teaspoons baking powder
½ teaspoon salt
3 cups fresh berries, larger berries chopped or sliced
2 eggs, lightly beaten
2½ cups milk, plus more for serving
½ cup pure maple syrup
3 Tablespoons melted unsalted butter or coconut oil
2 teaspoons vanilla
