    Chapter One: Introduction

    Tea is a delicious beverage, often served hot, that is made by steeping the leaves of certain species of plant in hot water. Second to water, tea is the most highly consumed beverage in the world and it has been enjoyed by humans for many centuries. Though real tea is made from the leaves of the Camellia sinensis plant, so-called herbal teas can be made from an infusion of certain herbs or fruit. Some examples of herbal tea include rosehip tee, rooibos tea, and chamomile tea.

    Not only does tea have a unique flavour but it is known around the world for providing a wide variety of health benefits. Tea contains valuable antioxidants which may help to reduce your risk for certain types of cancer – it is also an excellent source of polyphenols which help to protect your body against degenerative diseases. Different types of tea have their own unique sets of benefits as well as their own flavour and aroma.
