Dr. Denise Victoria McAllister is an accomplished writer, professional speaker, and business consultant. Dr. McAllister has a Master of Theology, Master of Professional Counseling, and a Doctorate in Counseling. She is certified in food handling. Dr. McAllister has traveled overseas sharing her stories of success and accomplishments. Assisting individuals to believe in themselves. When we believe in ourselves first and foremost; nothing is impossible. She enjoys cooking and watching others enjoy her unique meals. Which she accounts to her roots and experience from preparing daily meals for her family growing up. She is happily married to Anthony Dwight McAllister since 1997. PREFACE

Thank you for your investment in purchasing Mama Denise’s Specialty Cuisine Cookbook. These dishes are not inclusive. These are some of my favorite ones which I am sure you will enjoy cooking, eating, and sharing with others.

The wonderful thing about cooking is that for your prepared dishes to come out exactly the way you want them to – you must enjoy cooking; I would even go as far as to say, You must love to cook.

Even though cooking can be therapeutic; I suggest not to cook while you are angry or distracted. Cooking requires your undivided attention. Prepare your food with love.

One of my greatest feelings of achievement for each dish I have prepared is watching how my family, friends and customers enjoy them.

I did not know until I was grown that my ethnicity has a lot to do with me wanting to see people enjoy what they eat. My grandfather was from Sicily. My grandmother was an African American. Just like my recipes I have a mixture of a southern cuisine flare that is second to none. I create as I cook and so can you. I am thankful for someone suggesting to me that I write a cookbook.
