    I was looking back at my first ebook and thinking about how much my cooking has evolved into making desserts, both raw and baked. I love making and blogging about desserts as much as I love baking and eating them. So I decided to create an ebook of desserts just in time for the holidays. Below is a collection of my favorite desserts: cakes, ice cream, pies, cookies, all for you and your holidays parties. All are made with whole, plant-based ingredients, most are gluten-free (or easily made GF) and a lot of them feature PLENTY of chocolate and peanut butter. I try to make desserts with as little sugar as possible without taking away from the sweetness. Some desserts are sweetened with fruit or contain fun ingredients like avocados.     Raw Double Chocolate Cupcakes with Chocolate Center

    These cupcakes are one of my most popular recipes They are no bake and easy and you can whip them up within 15 minutes. No oven needed, just your food processor. If you are craving chocolate or have a big (or small) party to host, wow your guests with these cupcakes.

    Cake ingredients:

    1 3/4 cups of raw walnuts

    3 tbsp of raw cacao or carob powder

    5-6 pitted medjool dates

    Turn your food processor on high and keep it there while everything blends. The cake will be crumbly, slightly oily from the walnuts but not super sticky. The goal is to have crumbly cake, not a super sticky mixture that we make for pie crusts. So, start with 5 or 6 medjool dates and taste your cake, if you need more sweetness, add another date but too many dates will make the cake too sticky. Transfer the cake to another dish to free up your food processor so that you can make the icing.

    Frosting ingredients:

    2 ripe avocados

    6 tbsp of raw cacao powder

    7-8 soaked medjool dates

    Process on high, don't add any liquids, you want a thick icing. Taste and add another date or two if you need more sweetness. The icing will be super thick and a very dark chocolate.

    Notes: When I tested this recipe for the second time, I used pecans. They gave the cake an oilier consistency but it was still delicious. Walnuts gave a little bit more of a drier cake. If you want to use a liquid sweetener, date syrup is raw. If you aren’t raw vegan, use maple syrup. Use ¼ cup of liquid sweetener.

    You can make raw and baked desserts. Raw ingredients are ingredients in their natural form that aren’t processed or heated in any way. There are many raw sweeteners and you can make a cake or cupcakes from any nuts and dried fruit that you have lying around. I love desserts with nuts and dates or raisins for
