    Vegetables are low in calories and fats but are good sources of vitamins and minerals. They are mostly green, yellow or Orange and they are also rich sources of magnesium, potassium, iron, calcium, beta-carotene, vitamin B-complex, vitamin-C, vitamin K and vitamin-A.

    Vegetables are also excellent sources of many antioxidants. These health enriching phyto-chemical compounds help in boosting the body’s immune system against malnutrition, stress, diseases, and cancers.

    In fact, Vegetables are richly packed with soluble as well as insoluble dietary fibers known as non-starch polysaccharides such as cellulose, pectin, mucilage, hemi-cellulose, and gums. All these substances absorb excess water in the colon, retain a good amount of moisture in the fecal matter, and help its smooth passage out of the body. It therefore protects the body against digestive system disorders like constipation, chronic constipation, hemorrhoids, colon cancer, and irritable bowel syndrome.

    You eating at least nine servings of fresh vegetables served from different varieties of your choice will be quite good and a beneficial dieting plan.
