INTRODUCTION
Food, as we know it, involves much more than getting our stomachs filled. Like blood, food also represents life. With evidence-based science, many researchers have proven and asserted that the type of food we eat has an impact on the overall health of the body and its organs, including the kidneys.
We can see what happens outside and around us, but what goes on inside remains unobservable to the naked eye. As such, we need to be careful with what we ingest. The effects of our food could either be negative or positive. Due to this, people seek to know and understand better, having abundant works of literature, in-depth studies, and extensive plans serving as the base for a generally enlightened community. With the ease in communication and exchange of information due to technology, people are more knowledgeable and informed about a healthy lifestyle. The selection and consumption of healthy foods is now a priority.
Consequentially, there are increasingly several types of diets designed for many purposes, necessitating a thorough search and evaluation before settling for anything. While some are results of extensive studies and researches, others are baseless without any refutable claim.
Nevertheless, it brings to the surface the importance ascribed to food in everyday healthy living. This book is, therefore, written to address and meet the essential need of making sound choices when selecting and preparing our food. It targets not only individuals diagnosed with a kidney disorder of any kind, but also those who desire to lead a healthy lifestyle, take the stress off the kidneys and elongate their lifespan.
The kidneys are one of the essential organs of the human body. All things equal, most individuals have a pair of kidneys that work hand in hand to maintain a balance of the entire system in a process known as homeostasis. As necessary as this function is in the optimum operation of the body, the primary utility of the kidneys is excretion.
They do this through selective glomerular filtration, reabsorption, and excretion. With only about an output of 1.5 liters of daily urine, the extensive work of the kidneys is lost to many people. The kidneys are charged with filtering approximately 180 liters of fluid and twenty percent (20 %) of cardiac output. Some of the remaining functions of the kidneys are the following:
Ø Removal of protein wastes from the blood
Ø Body acidity level maintenance
Ø Ridding the body of excess water
Ø Excretion of surplus body fluids and minerals
Ø Activation of vitamin D
Ø Active participant in the stimulation of red
