    INTRODUCTION

    Renal disease, chronic kidney disease, renal failure or kidney failure describes a loss of kidney function. When this happens, the kidneys cannot carry out their main function of filtering out wastes and fluids from the blood. People with failing kidneys must follow a renal diet to significantly lower the amount of wastes in their blood. This wastes comes from the food we eat. Renal diet also helps their kidneys to function better and prevents a complete and permanent damage of their kidneys. A renal diet is a diet that is designed to control the intake of fluids, sodium, phosphorus, potassium and protein, depending on individual conditions.

    People with kidney disease must ensure that they control the level of chemicals and fluids that enter into their body. Since their kidneys are failing, they cannot process excess liquid. Even with the help of dialysis (artificial kidney treatments), it is impossible to remove all the waste and fluids that build up in the body. This is why they must follow a renal diet to limit the buildup of waste products in their body. The renal diet is restrictive. The amount of essential nutrients, such as protein, sodium, potassium, phosphorus and fluids that enter the body must be controlled. These are the nutrients that can affect the kidneys. 

    No potassium for instance, means no bananas, no yams, few tomatoes, few nuts, and a negligible amount of coconut milk.  The versatile dietary staple, potatoes, must be boiled, drained and re-cooked to remove or significantly lower its high potassium content. No sodium means no salt. Additionally, if sufferers are diabetic as well, they must also limit carbs, sugar and fruits in their diet and restrict fat as well. Fluids must also be limited. They must reduce the liquid in their foods and drinks. Some resort to sucking ice cubes to alleviate thirst. This makes the renal diet not only restrictive, but inconvenient. This is because, many sufferers often sacrifice taste and pleasure for necessity.

    The truth is that isn’t that difficult to find delicious meals that you and your family will love. It is simply a case of modifying recipes to produce tasty and flavorful meals. This book makes the balance between enjoying your meals and making the right adjustments necessary for your health.
