Fresh & filling SALADS

Ham hock, new potato and asparagus salad

Rich in minerals and vitamins A and C and folic acid, asparagus is a great addition to this vibrant salad.

Serves 3-4Prep 10 minsCook 15 mins

400g new potatoes, large ones halved1tbsp olive oil100g green beans, trimmed150g asparagus, trimmed75g mixed radishes, sliced90g lamb’s lettuce200g cooked, shredded ham hock

For the dressing:

4tbsp yogurt½tsp English mustard2tbsp tarragon, finely chopped

Put the potatoes in a large pan with 1tsp salt and cover with cold water, bring to the boil. Reduce the heat and simmer
